Whole30 Day 20

Pre-workout:  Coffee w/coconut milk

Breakfast:

Eggs, sauteed spinach, sweet potato & roasted chicken
One of my favorite breakfast companions...
Lunch:
Tuna w/paleo mayo, cashews, apricots & veggies

Dinner:

Chicken, cauliflower & sauteed kale w/bacon
Dinner was an experiment of sorts. Thankfully it turned out. I had originally planned on just marinating the chicken, but after tasting the marinade/dressing I decided to bake the chicken in it. Yum.

I adapted a recipe for the marinade from Everyday Paleo. Basically, I combined in a blender: 1 c. olive oil, 1 c. sundried tomato, 2 cloves of garlic, juice of half a lemon, basil, rosemary & 1Tbs Dijon mustard. (She uses capers & no dijon).

I also made this recipe of sautéed kale & bacon. Double, triple YUM! My husband was upset I finished it....whoops lol.

Exercise: 25 min Strength 6 sets/5reps (deadlift, shoulder press, bicep curl). 12 min HIIT 3 sets (squat thrust, jumping jacks, mountain climbers, fast feet). 10 min Pilates "waist slimmer". Feeling stronger and faster every time! I'm also noticing some nice muscle definition.

Overall: Another great day! I got a bit hungry this afternoon, but I drank some water to see if that did the trick. 10 min later I was no longer hungry. Awesome. Besides a minor dental issue, (lost part of a filling today while flossing...grrr) today was fantastic.

Ooh, that chicken does sound yum.

Yikes, teeth stuff freak me out. I couldn't handle being in the dental industry.

Your baked chicken looked good! The marinade sounds really tasty. And kale with bacon, mmm!

Seeing muscle definition is definitely a good thing ;) You're doing an awesome job!

All of your meals look great. I don't know if I'm losing fat or my muscle is coming through haha. I'm noticing more muscle definition and I feel more endurance while exercising. It's a great feeling that I'm not sure if I'm ready to give up haha!

Next time I think I'll cook the chicken and sauce in the crock pot.
@Kristen- I feel the same. I think it's a combo, fat loss & better tone. Either way, looking and feeling awesome is a fantastic feeling :)
