Recap of Day 1

To honor the start of April's Whole30 I busted out my JERF shirt. Awesome right??

Recap of yesterday really quickly....

Coffee w/homemade coconut milk
 Not pictured, 2 hard boiled eggs, pre-workout. 

Workout: 20+ min Strength, 20 min HIIT, 10 min Pilates, 25 min Yoga

Post workout: Cabbage, kale & parsley sauteed in coconut oil, egg whites & strawberries


Lunch: Taco salad made with ground turkey

Dinner: Beef curry on a bed of spinach and steamed broccoli.
 You may be looking at these cupcakes and wondering why the heck I'm posting a picture. No, I didn't eat any.  My grandma dropped by unexpectedly this morning with a plate full of them.  Chocolate eggs too.  Wasn't that sweet of her?? LOL.  My husband came home from work, took one look at my JERF shirt and said "So I'm guessing you don't want this cupcake?". Very perceptive dear!


So there you have it folks! Yesterday was a success.  Today I have some plans for a creative project that will get the kids involved a little bit.  Hope you have a great day!!

Your husband is so funny! Is he not doing the Whole30 with you?

No, hubby isn't doing the Whole30. He's eating better, some of the time, but he hasn't hit that point where he's really ready to totally change the way he eats. I make dinner healthy, but he really struggles with a sugar/carb addiction. Part of the problem is that he gets up at 3 a.m. to go to work. His stress level is also high. I've got to come up with a better plan for feeding him during the day, but so far I haven't. It becomes overwhelming to plan and prep, especially because I'm afraid he won't like what I make him or I won't give him enough. *sigh* I'm not sure what the answer is. More effort on my part to help him I suppose.

Ahhh husbands. The minute I talk about a radical change in our diets (he's on meds, 1/2 dozen a day, and had a bypass a few years ago) and I'm on nothing and the first thing he does is start asking about what will he have to give up! I'd like to say...1/2 dozen pills a day lol!!!

Definitely love your JERF shirt! I am definitely visiting Underground Wellness! When you cook up your cabbage, kale & parsley do you season it with anything or are you just hittin it au'naturale?

@Maria- I use a bit of salt and pepper, but that's it! So yummy :)
